I'm a Filipino in my mid-40s. It's nice that you and your uncle are tasting Philippine cuisine. Dillon, if you like lemonade in your motherland, they have something in the Philippines called "calamansi juice." The taste is not exact, but quite similar and delicious.

to eat kare kare, scoop with spoon the peanut butter sauce place it on top of your rice on your plate, then add to it the meat and the veggies and if you want more salty taste to it, add tiny amount of the shrimp paste and eat it. Shrimp paste flavoring could be in 3 different taste: salty or it could be sweet or it could be sweet and spicy.... so you have options based from your taste buds.... you could use it as condiments in any kind of food aside from kare kare... you could even eat it mixed with plain rice alone or mixed in fried rice.

to eat shrimp sinigang, make sure rice is on your plate or better in a bowl, pour the soup there together with the veggies and shrimp with no shell and head and scoop it with spoon to eat. Some people to they add a bit of fish sauce with chili for spicy taste for those who likes spicy only.

Like the Crispy pork pata or shank, cut it with the knife in bite size, put it on top of your spoon and pour tiny amount of vinegar condiments on it and eat it.

Hahaha . Serving the crispy Pata on a banana stand! That’s novel.the pata should be eaten with sauce. The food looks great and seems a whole lot for 2 or even 4 people unless you’re totally famished and ready to eat a lot! Thank you for patronizing Filipino cuisine. Curious how much that order came up to. Hopefully not too much.In the province, that would take the total to about $25-$30 and perhaps $40.-$50. in Manila. Bon a petit or Kain na in Tagalog!
