I've made this recipe several times now. And my family and I absolutely love it. I've also made it for a few potluck lunches and dinners at my church and place of work. And it was a big hit. Now everyone keeps asking for it. **Cook note*** I couldn't find Chinese sausage. So I used chorizo instead. It worked awesomely!!!

Oh my goodness, I have been looking for this recipe forever and a day lol. I am 60 yrs. old. But when I was a teenager we lived in Russellvill, Arkansas. My Mom worked at a hospital there. A group of Filipino nurses came and worked and learned there before they went back home. My Mom quickly made friends with them and we had many meals together. I loved this dish and wished for years my Mom had gotten the recipe from them before they had to leave. Thank you so much. God Bless You and Your family.

Spent half of Labor day laboring over this dish as I had the pleasure of experiencing for the first time last weekend when a Filipino friend brought to share at pot luck. It was a big hit. I googled Pancit and luckily hit upon your video. I have watched numerous times and have a a large tray to share tomorrow with my Filipino (and other nationalities) co-workers at Kaiser Permanente. I'm 100% Irish but love learning about different cultures and traditions. Maybe they will chance their arm and try some Irish recipes! LOL . Thank you though, great job.

Great video. Very rarely that somebody cooking this pancit recipe on KZbin speaks genuine articulate English. Almost all are done by Filipinos who speaks Tagalog-English or English mixed with local dialects. I love the video. I use those same noodles but I DO NOT soak in hot water! when I did they all clumped together like cooking spaghetti noodles without adding EVOO and not stirring(big clump) and good luck separating them then. I soak mine for 10 min in cold water and they soften up and separate beautifully. drain add the soy veg and chicken

I'm going to be making pancit tomorrow for Thanksgiving. I just wanted to see how others make it. Your video is similar to how I make it. I use the clear noodles as well. Chicken (not pork) and chinese sausage. Sometimes I add shrimp. Another thing I add is cut up hard boiled egg at the end for garnish. Nice job!

Omg, you cook pancit like my mother did--same veggies, fresh and healthy and beautiful--so I'm thrilled to find your video! She passed away in 2007, and I never learned how to make pancit, but there's still hope for me! I do have a couple of questions. Did you soak the noodles in 'warm' tap water, or cold? Also, once you transferred the noodles to the pot of boiling water/broth, did you continue cooking it, or did you turn off the heat? And was it only water/broth, or did you put soy sauce in there? And what about using patis in the recipe? And once you finished the noodles, did you put it on your serving tray immediately, or did you add the vegetables to the noddles, first? Thanks so much!!

+Michelle Dudar Aloha Michelle :) I'm so very sorry for your loss --- But know she is always with you in your heart and in spirit .. and cooking the way she did will always have her be a part of you :) Giving you a big hug sweetie --- :) I soaked it for only a few minutes in faucet warm water (roughly 5 or so). Yes continue cooking the noodles in the pot for another 5 or so minutes as well ... As soon as the noodles soaked in all the liquid and is transparent then it is okay to turn off the stove. Always add a little bit of soy sauce to the liquid too with lots of pepper and little bit of salt to taste .. I don't use pats in case someone is allergic (my daughter is allergic so i don't use patis). I ass veggies along with the cooked pancit and mix well .. but i do reserve a quarter of the cooked veggies to place on top for decorations. I transfer to a foil or oven proof container so that I can always reheat on low heat if necessary .. :-) Hope all this helps .. :=) Mahalo ..Diane
