I used to eat street food lugaw near the divisoria market in the 1970s. They would give you a plate. You got some thai chili peppers and crush them with the back of your spoon. They put the chosen organ such as isaw in the plate and cut it with a small knife in the plate. Then they add in the lugaw.

in the fujian dialect, gu is cow so goto is cow stomach. ti is pig so tito is pig stomach.
