Filipinos really do take their food to the next level of unique! They even experiment with their vinegar...
Known as "Suka" (but not to be mistaken with the word for vomit), vinegar is widely used, and something commonly found almost everywhere in the Philippines! You can see it for sale in markets, at sari-sari stores and even in big jugs in the bukid. Vinegar is an important addition to a lot of Filipino foods and something that a lot of Filipinos love to have!
Saying that...
After exploring over 30 provinces in the Philippines I have started to realize there are some very unique and delicious styles of vinegar! This was one of my favourites that a local in Carles, Iloilo shared with me!
The ingredients were very unique, but the taste was AMAZING!
This is.... "Kuya Daryl's Super Ilonggo Style Suka"...

My Filipina wife is from Lapu-Lapu, and she taught me similar suka and I’ve since created an amazing suka that is great medicine too... my Filipina family loves it! Almost identical ingredients to yours here but with following differences... Vinegar I use is Braggs Apple Cider Vinegar with mother (that is key for many reasons). I add turmeric spice, thyme, rosemary and sage... and more than twice the peppers and ginger and garlic you used;) We make in a Patron tequila bottle 😂! The recipe is in part the original 4 thieves vinegar, from the times of Middle Ages and bubonic plague. It is legend that gives the 4 thieves ability to go into dead villages and steal everything without getting the plague. When captured the king traded their freedom for the secret recipe:) It has antibacterial, antiviral, antiseptic, and antifungal properties! Almost forgot... for maximum benefits let the ingredients marinate in vinegar at least 4 weeks! 😉 Enjoy my friend!

i missed and missed TUBA! used to cut classes in 4th year high school with a friend and we will drink TUBA! my friend had the money to buy the TUBA, hahaa! the mananguete's (the guy who makes this TUBA) house is like 15 mins walk from school through thick bushes of guava trees, coconut trees, and all sorts of foliage of trees/bushes/grasses all green on our path to get to his house. but definitely worth it! we will come back to the next class all buzzed and our classmates will have no clue with it. if you made it to 4th year high school in the philippines and kinda grew up matured on thinking somewhat, hahaa, as i like to think, at that particular time of my life, 4th year was kind of dragging, because well, you're pretty much done as far as your basic schooling, so we can affort to cut classes here and there. and believe it or not, i made the third honor roll on graduation day, so shocked, because it was my first time to have achieved such a feat as a student ever, beginning from grade 1. :)

Its langgaw in iloilo...if u put garlic.. ginger..langkawas and a lot of sili...its called sinamak...

Awesome video, Kulas! :) BTW... vinegar that's aged for at least 1 year is called "dalisay". When we aged orange vinegar (color comes from tree bark flavoring/coloring), color turned to almost brandy-like. Yes, vinegar with the spices, etc is called "sinamak". Namit GID!

LOL?! I think you are the first and only person in the Philippines to have ever dipped a pizza crust or even any bread in a suka to date, coz of that im excited to try it as well. I assume it's going to taste like the orange covering of kwek kwek

Thanks for reminding me that "langkawas"...I am an illongga but I always forget it everytime I want to share a story about it with everyone, ,,,and that mixture is called "sinamak" 👍👌😜😜😜

We used to mix langkawas stalk too with mongo(green beans)..with pork leg or fried fish it's nice ...😊

that's a sinamak you're making kyle and it's the best partner to a balot... the balot woudn't taste as good without a perfect blend sinamak. :D

We call it Sinamak if there has an ingredients. Suka in Tagalog, and Langgaw in Ilonggo.... Love it

If you leave tuba in the refrigerator it turns into vinegar as well. I was at a fancy hotel in Davao City and there was a local tapping the buko or coconut water for tuba. Otherwise the coconuts would get too heavy and eventually fall on guests.

ansarap ng tuba :-) in ilonggo, we call it sinamak.. in cebuano, we call it pinakurat.. spiced vinegar but there's a little difference in the spices added :-)

we call it sinamak its kahang (spicy) you can dip some half ripe papaya with sinamak or dip it with some turnips or singkamas

Tuba is really sweet. There's a certain powder which is added to the tuba,locally called baluk, which gives the tuba an orange color.it also speeds up fermentation into langgaw or vinegar. It's sweet but if you drink a pitcher of it , wooh, you'll get get a big hangover the next day.

In ilonggo terms, a 1 day old tuba is called bahal. Aged tuba is called langgaw or vinegar. Spiced vinegar is sinamak. Usually, vinegar is aged in glass jugs which is sometimes buried neck deep in the ground with only the bottle top exposed. Aged vinegar is considered "dalisay".

langkawas is a blue ginger in English. and that's what we added to make a sinamak in ilonggo.

The best suka for me is made from sugar cane (yellow color) it has a very strong taste and strong smell it is perfect for the raw fruits like indian mango, guava, singkamas, cucumber etc. ,they taste good even when you use them instantly. I mean its not like the other vinegar that you need to ferment them with chili, onions and other stuff in order for them to taste good , sugar cane alone is fantastic. Anyway I'm a vinegar lover I used to drink it 😁

hey Kulas....... "suka" is vinegar made from coconut sap.. or palm sap... it is a fermented "tuba".. the one you are making is "SINAMAK' and the best vinegar to use is the 2 years old that you had tasted... lol

Idk if that's just really fresh tumeric, if that was the root crop that you used. But the tumeric I saw in the Philippines was really orange in color. Maybe it was completely ripe already that gave it that orange color!?!

IRLON24S As far as I know, they're roughly the same; spiced coconut vinegar. Only difference is the amount of hot chillies, "Pinakurat has more".

I add suka to my sweet meats (longanisa, tocino, etc.) so they won't taste too sweet.

The extremely strong vinegar isn't that strong once you have it with food. I'm Filipino and I've tried it. It's not that bad until you try to have a capful. Enjoy being Filipino. Don't forget you chicharon bro.

I think langkawal is galangal not a yellow ginger or turmeric. galangal is useually use for thai food or soup likr (tom yum gong )
