I make our coffee from freshly ground beans every day. The other day I frothed the milk before preparing the double shot of coffee. Sometimes we get the order of things out of order. Lessons learnt. I was wondering what leaves & preparation in the pot you used. Did you refrigerate the fish wrapped in kitchen paper & plastic? I caught & released a stingray a little while ago. Do you have any suggestions for preparation & cooking? Thanks for sharing

I always wrap the fish in a plastic bag or in glad wrap to prevent it getting dry in the fridge. For storing fillets in the fridge, I wrap the fillets in paper towel and then in glad wrap.

how does this compare with say tuna or kingfish sashimi?

It's clean firm tasting flesh compared to kingfish or tuna. It's definitely one of my favourites but just tricky to remove the skin is one pass sometimes.

Fried it. Not the best way to eat it as its pretty dry, will try something else next time.

Can you eat fish caught in the harbour for sashimi?

You can but it depends where the fish was caught and also in moderation. If you decide to keep a fish for sashimi I think it's very important you look after your catch. I am a firm believer that you should ikejime and then immediately bleed the fish. Try avoid damaging the heart to allow it to pump as much blood. It's important to not let the fish suffer and die a slow death as this degrades the quality of the flesh.

@@bradleyseeto What about preserving it, i usually go fishing at middle head which is at the entrance of the harbour and i always brain spike and bleed the fish with my knife but my parents worry about parasites, are they actually safe to eat?Also, is ice nessasary?
