coming from a jamaican here.... we don't use the ackee in the cans as ours comes straight out of ackee pods, but given that ackee is not produced in certain countries: the water from the ackee tin should have been drained and the ackee along with the salfish should be boiled, after the ackee and saltfish have been boiled you add your onions, pepper, thyme, escallion, etc and fry them in hot oil for a few seconds then they would add the salfish and slightly fry it up aswell, then throw in the ackee and then add our powder seasonings. this isn't all the steps, but clarification that the salfish should have been boiled and slightly fried, but the wrong steps were applied.

Ahhhh blessss….you’re meant to boil the salt fish in a pot of water and pour it off - do that 3 times to get rid of the salt preservative in the fish. Then line a pan with oil, add the scallion / spring onion, chopped peppers black pepper (a dash of seasoning) add the salt fish to the pan, to sauté…then add the Ackee last and gently mix in Ackee. Plantain should be fried until very golden brown, that’s when it’s cooked right through.😊
