Carmy switches between the Yoshimi Echizen 240mm and 150mm, in addition to the Gesshin 210mm, throughout seasons 1 and 2 - all of which are from Japanese Imports in Beverly Hills. “The thing about that place is all the Japanese knives are hand forged,” Roeper says. “Each family and each artist that we work with does a different type of hand forged steel.” “And yes, they do come with a wooden sheath,” Roeper continues. “That’s to protect the knife, but also to protect anyone who would accidentally be messing with it. These knives will cut you so quickly, you won’t know what you’re doing. They are so sharp. They’re taken care of very differently. There’s only one or two places in Chicago that knows how to sharpen them.”

I remember just being in a haze of frustration re: Carmy this episode. He does a grand total of one (1) thing this entire episode that helps the construction of his restaurant. And it still wasn't the fridge guy. A year or so on, I know now it was a deliberate move by the writers to foster that but still. I have to ungrit my jaw lol.

i love claire too! she's an interesting mix of introverted and forward, funny but her jokes don't always land. She's caring and honest. i've seen a lot of other reactors/fans of the show who think they're a little off-putting together, but i really like how carmy is always soft spoken and genuine around her, we don't often get to see that side of him in the kitchen or with his family.

I think that's the reason. She's is literally a dream girl, with no flaws. Which is odd to see against all of the other characters that are very layered and feel realistic

I'm sure that someone else has said it, but I think (and I'm staking my claim to it now) that we're going to find out that, in the end, Mike's note to Carmy saying "Let it rip" is really "Let it R.I.P." Everyone will do better when they're not trapped in the kitchen together, and relationships will thrive.

Claire IS great...too great...one might say suspiciously Mary Sue great. I just wish we got to see more of her world or at least Carmy care more about her world. It's like her world revolves around him and I don't like it. Hopefully we explore more of Claire as a fully-formed human in season 3.
