I personally love Final Fantasy II, it's not perfect but the story was just so much fun for a Famicom game and I really loved it! I played the Famicom version and I did a lot of grinding, but the game doesn't really encourage grinding and it penalizes you for that even (since most late game enemies have the blood Sword effect on their attacks)

Final Fantasy II is well balanced enough that you never need to grind anything but the Esuna spell. Just pick a role for each of your core three members and play the game. It will be on the harder side of play, but it will never be prohibitively hard. Just learn about armor weight for your spellcasters and don't spread yourself too thin with the spells you learn. Also, HP grinding is never worth it anyway, due to the %damage attacks that many endgame monsters have. The dead end rooms do have something tho! A much higher encounter rate, usually more than double the dungeon's average.

If Final Fantasy 2 hit right for you, you may be interested in the SaGa series - they have a lot of the same bones with a few more years of experience and refinement backing them, especially the Romancing SaGa games.
