One thing: Concrete does NOT dry, it cures. The difference? Drying is the process of water removal from a material, which does not happen in concrete. Instead the water reacts with the other parts of the concrete to form a solid... well rock. That's also the reason why it doesn't really matter if concrete gets wet or not (you can even pour it under water). What's important is that the curing process is controlled and you keep moisture and temperature under control, i.e. it's not too cold and not too fast.
