Typical hemi knock when they sit for a long time without use. It's good to prime the system for oil before starting if it's been sitting for a long time.

With a clutch fan, you need to put severe duty clutch fan. And a 170 thermostat and I bet with that setup. Your temp won't even get over 170, 180. If you can grab your clutch fan and spin it, and there's no resistance it's worn out.
