How do you know which direction of the cables to calculate? Like at 2:08 how do you know to do B-A and C-A instead of A-B and A-C?

You assume a direction, if the answer turns out negative in the end, then you flip the vector. If you watch more of my videos eventually you'll see one that turns out like that.

I think you made a mistake. you wrote the cartisean vector for ac, not ca. it should be -6i+1j+3k

the answer should return the same value but in the opposite direction once all calculations are complete if that were the case.

Dude why don't you just take the dot product of the position vectors and magnitudes to find the angle, then multiply the force along the vector you want by the projection angle?
