This video shows you how to preserve mangoes for long time storage. Not only are dried mangoes delicious, they’re also rich in Vitamin A, and high in fiber.
Ingredients:
6 ripe medium-sized mangoes
1 cup (200 g) sugar (Amount is personal preference. Use less if you prefer)
1 gram Campden preservative (aka. potassium metabisulphite)
Drying:
Oven - 150 F or 65 C - 7 hours
Natural sun - above 91 F or 33 C - 16 hours (2 full days)
INSTRUCTIONS:
1. Wash and remove mango skin.
2. Slice the flesh from both sides of each mango. You should get 2 slices from each side. The thickness will be approximately 1/3 of an inch (just under one centimeter).
3. Put the slices in stainless steel or glass pot.
4. Pour in enough water to cover them.
5. Add one cup (200 g) sugar (Note: If you worry about sugar, most of it will be drained off later in step #10).
6.Boil for 2 minutes on high flame. Boiling kills organisms that cause spoilage.
7. Reduce heat and simmer for another 15 minutes.
8. Remove pot from heat. Add a crushed campden tablet, and stir gently to blend.
9. Leave slices to soak in the syrup for 6 to12 hours in refrigerator.
10. Drain off sugar syrup with strainer.
11. Line a tray with parchment paper, and arrange slices in single layer.
12. Dry under hot sun in temperatures above 91F (33C) for 2 full days, 8 hours each. They can also be dried in oven at 150F (65C) for 7 hours.
13. Drying process is complete when the mango slices have shrunk by about 50 % and become translucent.
14. Roll them in confectioner’s sugar if desired.
