boletus are so delicious
@raffaeledivora95172 жыл бұрын
You can eat the boleti that have them (if they're not too many that they damaged the structure of the fungus too much, i.e. whrn you see that the interested part starts to have a slight tint of yellow/brown, or the fungus un that part looks more empty than full) by preparing in the following way: clean the external part of the fungus without using water. Then slice the stem and the cap in half with a vertical cut, look for the parts that are yellow/brownish or way too damaged as described before. Cut these parts out (possibly, in a more conservative way as shown in the video, if this guy was a surgeon he would cut out the heart with the liver 😅... but I guess ehen you have so many mushrooms, you can not worry about things such as efficiency. Btw, other than that, awesome video). Now you're left with undamaged parts (hopefully) and parts that have low to medium damage. Proceed to cut them into fine slices (about 3-5 mm in thickness) that you will put to dry under the sun on a newspaper sheet. The slices will be on a vertical plane in the cap, and horizontal in the stem. As before, if you encounter "bad" parts durino the slicing, perform a little "surgery" and cut that part out. Once you're finished, you just need to wait for them to completely dry out (if it's sunny it usually takes 2-3 days depending on how much cloud coverage you get). The insects and worms will all flee the slices trying to escape the heat and the drought, leaving the slices completely free of them. This btw is the reason we use the sun and not another source of heating such as an oven: it would be too quick, possibly killing the poor critters while still inside the slices, or you would risk to litter the whole inside if your oven with dead insects. During the drying, maybe check the slices once a day to make sure they don't attach to the paper and to gauge the degree of dryness by gently trying to bend them. When they're dry they would be completely rigid and then abruptly snap, like a thin dry biscuit. Once that state is reached (doublecheck the region near the attachment of the cap to the stem, it usually is the last to dry out) you can just pick them all up and seal them in a glass jar, which you'll store (ideally in a cool and dark place). They last a very, very long time [see several years] and are completely safe, provided you use them by cooking them (i.e., for some "risotto", or to prepare a pasta sauce). This is how the ceps (boletus edulis, and other edible boleti) are traditionally treated here in Italy when they're not pristine (unlike the majority of the beautiful and very fresh specimens shown in this video). Last thing to note is that this method generally allows you to also pick and consume mushrooms that are a bit older as those shown at 11:11 (though the maker of the video checked the consistency of cap and stem beforehand, so they could have been completely eaten in the inside).

Yes, they are. Those were beautiful specimens, here in Italy we would have picked them immediately (the cap is unmistakeable for anything else, so they're one of the safest fungi to pick). They're pretty rare, at least in my region. Also, when they get old (and inedible) they start to decompose by liquefying into a sort of disgusting black liquid, which may be what turned people off

They're probably the best mushroom in terms of taste. However be sure that you have found the same species shown here before cooking them, most of the mushrooms which have the "sponge" under the cap are edible, but there also are a couple of inedibles (which are disgusting in taste, and would ruin everything you cook them with) and some poisonous species (most of them, if not all, can be recognized because the stem is coloured red/orange). Anyway boleti is one of the safest species to pick, since it's extremely difficult to pick something else in place of them due to them having the "sponge", and no one of them is classified as "deadly" [though boletus satanas (one of the ones with the reddish stem) is very poisonous, causing an extremely intense gastroenteric syndrome, so a big dose of it could possibly be deadly... but as I said, if you know what signs you look for, it's impossible to mistake it for one of the edible ones]
