It was a nice bun, but just wrong for the job. The ratio of meat to bread is key in a burger, about 1:1 is right. That bun was about twice the size of the meat. A brioche is typically eggy and sweet - the classic burger bun is the potato bun - it's simple and not a distraction from the main flavor event - the meat.

That and NO KETCHUP. George is okay with a ketchup-based sauce on a burger, but that's as far as he is willing to usually go with it. The only burger with ketchup he was okay with was the Cuban Frita, and that was because ketchup is what has always been on that burger, and he will respect that history.

Ketchup on a burger is such a cop out - it just masks all the other flavors with sugar and vinegar. George's ideal in a burger is all about the flavor of the meat being the center of attention, and then it needs the proper ratio of meat to bread. Tariq took $50 worth of Wagyu and smothered it in ketchup - and then his bun was twice the size of the burger!

George like most knowledgeable food experts probably thinks turning Kobe beef into hamburger is a crime. Since this was a comedy bit and likely not even an authentic competition I wouldn't be surprised if that was just regular hamburger though. The truffles looked real though. I have noticed some of George's favorite burgers don't even have a condiment on one of the buns.

Since I've watched a lot of George Motz on "First We Feast" videos, I'm not surprised by his choice of winner. He likes simple burgers, with basic ground chuck. I also know he is sensitive to burger/bun ratio. I'd personally rather have Tariq's burger, although I could do without the truffle fries -- and I also don't like ketchup on burgers.
