I like how you explain what you are doing. Around 11:12 you talk about how you add a log about every 30-45 minutes. That's really helpful to me to help determine how much time I would need to dedicate to maintain cooking temps. The thick 3/8" steel seems to really help maintain the temps compared to thinner offsets where you may need to add splits every 15-20 minutes. Nice technique on your foil boat. Brisket came out beautiful! I've been looking at the Workhorse smokers, thanks for doing this video!

@@skimpy150190 Yeah, unfortunately the $700 wagon wheels were necessary for my setup. The grill is so darn heavy (~850 lbs) that I am worried that with the standard caster wheels it comes with I would have a hard time moving it around across my lawn and to future locations down the road. I'd rather not have to spend that much $$$$ on a feature, but it beats a grill that rutts up my lawn and takes 5 adult males to move. It arrives assembled is my understanding. I may have to take it out of its shipping crate, but that shouldn't be too much work.

@@skimpy150190 yes...I purchased the "Cowboy Firebox" option and asked for the rubber wheels for ease of movement. I have used it for several months now including 6 + briskets, several pork butts and ribs...absolutely love the 1969.

@@skimpy150190 I think my wheel package is now the standard option. You can call direct and Ashley will help you out. As far as I can see, the only difference is size. The 1969 has been plenty bug enough for what I need thus far.

Was supposed to go into production in June but keeps getting pushed back. Seems like they keep getting crazy amount of orders.

those logs seem like they would spike the temp real hot! when i used just 2 splits in my oklahoma joe i get temps over 400F sometimes.. Do you encounter that that when laying down full size logs? How about the smoke that smolders from a full size log like that?

The fire box on this smoker is 24x27..so it can take big logs…once lit all you have to do is dial it in using damper or smoke stack .Plus metal so thick (3/8) ,it’s easy to manage your fire

Very nice pit, and you did a really good job on that brisket! I also have a hard time deciding between the foil boat and paper for briskets, because both work great. The fact my pit (Texas Pit Crafters PM 100) likes to run closer to 275 than 250 is my excuse why I usually cook by day. The downside I’ve been running into is that the end of my flat often dries out. It could be I’m not wrapping quite soon enough. I’m turning the flat end toward the heat when I wrap per Mad Scientist BBQ, so I may try leaving it facing away from the heat next time to see if that helps. Congrats on the new pit. Don’t think you could’ve made a better choice. 👍

I've been enjoying your videos. Very well done. The Workhorse pits seem really good. I've never cooked on an offset but am looking at a Workhorse pit as my first. The temperature seems really even end to end. Is there a hot spot in the middle? Or is it pretty much even across the entire cooking surface? It looks like your fire management would have a very positive impact on even temperature. Do you feel as though the Workhorse technology aids in such an even temperature?

The pit is well built and the science behind it is on point...it definitely make fire management very easy and hold it for long cooks...of course there is always up and down in temp but after a few cooks..you will get a good idea on how your pit work.I notice that the back by the smoke collector gets a little hotter than the front by the fire box and towards the wall as well. All in all I highly recommend this pit for everyone who looking for a smoker...thank you for watching 🙏🏽🙏🏽🙏🏽🙏🏽

When adding wood or opening the smoker to check on food …temp drop or spikes are little to unnoticeable thanks to a thick steel 3/8 👌👌👌highly recommend it

I don’t own a 1969 …but there’s not much difference between the two..I just went with 1975 so I won’t regret it later on..and it worked out really well for me.if you have the space and 💰💰💰in my opinion..just go with 1975

When you first lit your fire and checked your Temps, it seemed like it was 225 to 250 across the grate. Workhorse advertises 5 degree difference across the grate. What has your experience been with this?

these pits are pretty accurate ... it takes a good amount of time from lighting the fire until you get the pit dialed in.that was one of my earliest cooks, the more you cook on it the better you get to know and manage it.i can get it to an even temp now better than my first 3-4 cooks.

Back end by smoke stack is always hotter than from smoker by fire box.it takes a few cooks to find hot and cook spot in your pit and go from there. Your probes only reads a few inches from the door.I use ThermoWorks signals to get inside temp.

Last time I smoked an A9 Wagyu brisket the flat was like eating the point on a prime cut, unreal. Whats nice also is that it's already 90% trimmed so you're not paying $8-12lbs on fat that you'll cut off.

@@fredjones6975 tel-tru is always 25 degree less than inside the smoke chamber by tha wall... this thing is 24 inch diameter and there is a lot of radiant heat that comes in play.overall it hold temp like a champ.

if you ask me... I'll get all the upgrades available ...you only buy this thing once for life.the smoker is excellent and perform well on short or long cooks..highly recommend it

@@BackyardWarrior The issue with getting all the upgrades is that then the price more than doubles. Goes from $1,956 to $3,863, before shipping. This is a huge increase. For $4,000+ you have better smokers on the market.
