The choreographer in the striped blue shirt is Kasper and he is one of SM's main choreographers, so if you watch a lot of these behind dance practice videos with SM groups, you will probably see him often. He sometimes is also a backup dancer, so you may even see him in performances with Taemin, as well as other SM artists. What you saw was clips of EXO's dance practice footage from all different days. Usually when they are practicing for an event or a shoot, etc. they spend several days in the dance studio. For example, when they are learning a new set of choreography Kpop idols spend on average 10 hours a day for a week practicing, so you often see more than one day's practice in a behind or uncut dance practice video. They then spend the rest of the month practicing and perfecting it so that it becomes like second nature. And that's all before they reveal it in the MV, on music shows and in concert, etc. I've heard Kai say that when they learn new choreography they often spend more than an hour doing one move over and over again just to make sure that they are exactly the same and that their hands are all at the same level every time. They practice it so it becomes muscle memory and they no longer have to think about the dance, that way in live performances they can instead focus on their vocals. They literally have to memorize dozens of pieces of choreography as part of their career. In concert they are performing around 30 songs on average and they have to know the choreography for it all. Learning choreography isn't as difficult for them after 11 years of doing it, but you're right they are also very talented. It's not a quick or simple process. What you are seeing in this behind the scenes video is just a small fraction of the time they spend perfecting everything, which is why they are able to do it flawlessly live.
