補充:很多留言的朋友說要冰凍才好喝。但這說法只算對一半。 新酒或價格入門的58才需要冰來順口,如果將新酒放至少五到八年,風味更好,大都不需冰凍過。不想等那麼久,只要多花費些錢,買好一點的高樑就可以不用冰凍,如白甕的(或將白甕放三到五年),60週年59度的(現價要1700元左右),61週年的也可。員工專供的也不差,黑色標的58(約600-800元),還有一支全白色包裝的好喝(現已漲價至900-1050元),三節酒五年至十年份的都很順口不嗆。 而正金門的喝法是: 1-小酌,含在口內二至四秒再吞。 2-放ㄧ瓶微冰或低溫的礦泉水或開水,一口高樑一口水,道地的喝法,也可以減少高濃度酒精對喉嚨的傷害。 3-ㄧ天飲用高樑以不超過100-150ml為宜,飲酒過量,有礙健康。 Supplement: Many people in the comments say that it tastes better when chilled, but this statement is only half true. Newer or entry-level 58 proof liquors need to be chilled to taste smoother, but if you age the new liquor for at least five to eight years, the flavor improves, and it generally doesn’t require chilling. If you don’t want to wait that long, you can spend a little more money to buy higher-quality Kaoliang liquor, such as the Baiweng (or age it for 3-5 years), the 60th anniversary 59% (which costs about NT$1700 now), or the 61st anniversary. The employee-exclusive editions are also good, like the black-label 58 (about NT$600-800), and there's a fully white-packaged one that’s very good (though it’s now priced at NT$900-1050). The 3-year to 10-year aged varieties of Sanjie liquor are also very smooth and not too harsh. As for the authentic way of drinking from Kinmen: Sip slowly, holding it in your mouth for 2-4 seconds before swallowing. Keep a bottle of slightly chilled or cold mineral water or boiled water on hand, and take a sip of Kaoliang followed by a sip of water-this is the traditional way and can also reduce the harshness of the high alcohol content on your throat. It is recommended not to exceed 100-150ml of Kaoliang in one day, as excessive drinking can harm your health.
Kaoliang Liquor prints it's manufacture date and it should be opened least 3 years, it gets matured in the bottle. COSTCO sale it made in 2018 and it goes very well.

If both 38% and 58% Kaoliang liquor are refrigerated, the drinking experience will differ slightly. The 38% Kaoliang liquor becomes smoother after refrigeration, with its sweetness and aroma potentially becoming more pronounced. On the other hand, the 58% Kaoliang liquor will have its spiciness slightly subdued after chilling, but the body remains rich, with a more intense and robust aroma. Refrigeration can enhance the complexity of the flavor profile, depending on personal preference for either type!

@@ColeFogle I would say put Kaoliang in the "Freezer" not "Fridge". This would make you feel totally different world. And the longer you put 58% in the freezer the much better you will get

You should try the more expensive versions like the ones with the black labels or the ceramic ones. The yellow label ones definitely burn. And of course, iced in the freezer.

58° Kaoliang is 58% ABV, or 116 US proof. Canada phased out proof in favor of ABV, so I'm not sure what proof refers to in Canada.

You can also try 53%, better(sweet taste) than 38% but not pain as 58%.
