It's not easy to find a whole fish to take a picture, because this fish is normally sold in fillets.....

I don't have red fish or fuzzy melon in my area but I use yellow squash and swaii. It came out perfect. Love this fusion fish balls. Thanks for sharing.
Leng Yu, dace in English. But some Asian fish shops labelled Ling fillets as Leng Yu. Just Pronounced a bit similar between Leng & Ling, completely different, misleading. Dace are much smaller and full of thin bones. So umami of taste.
