Escabeche is the name for a number of dishes in Spanish, Portuguese, Filipino and Latin American cuisines, consisting of marinated fish, meat or vegetables, cooked or pickled in an acidic sauce (usually with vinegar), and colored with paprika, citrus, and other spices. In this recipe, we used fish tilapia and various veggies.

2 cloves garlic
1 thumb ginger
1 small carrot
red and green bellpeppers
1/2 cup water
2 tablespoon soy sauce
3 tablespoon ketchup
2 tablespoon sugar
1/2 teaspoon salt
1/4 tsp. pepper
2 tablespoon vinegar
2 teaspoon cornstarch
oil for frying
