It is a traditional starter originating from Kerala in which cooked fish is wrapped with banana leaves and coated with masala. The surprise here is that I don't use banana leaves. Any type of fish would work, including Pearl spot, Pomfret, and Tilapia. Season the fish with spices and shallow fry it. Meanwhile, make onion tomato masala. The onion tomato masala and the fish are alternately wrapped and slowly cooked in low heat.
