The fish is a Panama Graysbe, aka Ribera Cabrilla. They only grow to be 14-15", so if you get one that's 12", that'd probably be keepable. It is a grouper species, so the taste is light, though it can be a bit soft. Not so good as sashimi. (Tasteless & rubbery) Btw, your triggerfish are juveniles. They turn blue when they mature. And the weird fish in Pt 1 was a Lockdown.
