The trophy and Unique Northern Pike? Yes you can and one of the best places to catch them is Saint Croix where you get the golem lure. The fish Monsters you can only catch once though. But if you have enough line. Bait, Hooks then you can catch multiple at the same time. Up to 5 on some of them.

Why i cant see the mission

Are you going under fish Monster missions at the very bottom and then tracking it. I am not sure why it would not show up if you have not already done the mission. What level are you? If you are under the level that may be a reason.
