The only change I’d make to the recipe is to hit the top of the fish with a little oil or a slice or two of butter on high broil for a couple minutes before adding the sauce to get a tiny crust on top.

Louisiana changed the regulations to 4 redfish between 18 - 27 inches and you can't keep any above the slot. Charter captains also can't retain any limit on the boat for them.

That's Texas red fish laws, unless you want to use your one tag to keep anything over the 28, and game wardens will sit at boat ramps waiting for people to check, plus it's not uncommon to be check by the coast guard and they will call the game wardens if you have oversized fish

Have an issue with it, take it up with your state and get them to change the laws. But they wont, because theyve already done the research...and your research is your feelings.
