*Ingredients* For the base: 250g digestive biscuits 125g melted unsalted butter For the filling: 500g room temperature cream cheese 80g icing sugar 150g thick salted caramel sauce For the topping: 250g thick salted caramel sauce Fudge chunks Flaky sea salt 1) Line an 8x8" baking tin with baking paper. 2) Finely crush the digestive biscuits using a food processor or a bag and rolling pin. 3) Add the crushed biscuits to a bowl and mix with the melted butter until combined. 4) Pour the mix into your baking tin and press it down firmly. 5) For the filling, whisk together the cream cheese, icing sugar and salted caramel sauce until smooth. 6) Scoop the mix on to your base and smooth it out. 7) For the topping, melt the salted caramel sauce in the microwave. 8) Pour the melted salted caramel sauce on top and smooth it out, shaking the tin to make it smooth. 9) Sprinkle fudge chunks around the edge and flaky sea salt on top. 10) Enjoy!
