Cognac can only use one type of grape, up to 10 varieties are acceptable for Armagnac. Cognac is distilled in a pot still and distilled twice. Armagnac is distilled in a column still and distilled once. Pot stills are less efficient, which along with the double distillation leads to a softer and more subtle flavour. Column stills are more efficient and the distillation is faster. This leads to a bolder less subtle taste. But the aging and the barrels will be more impactful on flavour, which leads to overall not as much difference as you might think..

Cognac is typically aged longer than armagnac. Not as stated in this video.
