Hi Richard, great vids as always (just wish you had your volume up a bit). First up, I consider myself a novice! I started with the Air Still, which was a great introduction to this craft. It was never really clean enough for me.. until... I bought myself a Chinese pot still. What I do now is make myself a 12 Lt batch of Birdwatchers wash every 2 weeks or so. From that wash I take 10 Litres and run it through the pot still and end up with 1.5 litres of pure clean spirit at about 62% ABV and 1.2 Litres of slightly astringent spirit at just over 50 % ABV. I then water down the 1.5 lts of clean spirit and run it through my Air Still with a Gin basket. 12 gms juniper, 3gms Coriander seed. 3 gms Cardamon, 1/2 of cinnamon stick, 1/2 star anise, 3 slices dehydrated citrus and 30 turns of black pepper mill. Smash all of these in mortar & pestle and place in gin basket and cover with muslin. 2 hours later I have the best Gin ever. The astringent stuff is watered down also and re-run through the air still and used for my dark spirits ( I always keep a litre of clean spirit soaked in oak chips) which I add to my scotch etc. This works for me anyway. If you have an air still I urge not to throw out or sell. Air stills are perfect for distilling (or re-distilling) clean spirit. They are inefficient... YES but convenient and easy... HELL YES....

hi richard great video can i just add juniper berries to my spirit for the gin flavour as ive noticed you need to add other botanicals along side the juniper cheers richard keep up the fab work

I make cider but the only apples I can get where I live are the usual eaters and cookers and the resulting cider is bland and virtually tasteless no matter what mix of them I try , how can I make it nicer to drink?

T500 would strip all the lovely flavours. Better off redistilling in a pot still
