The sampling everything on the cheese board has another advantage - as a host you may be too busy to actually eat something during the gathering, so it's an opportunity to eat before everyone arrives. Also avoids the issue where by the time you get to your beautiful cheese plate after the party has started you find that the horde has already emptied it and you never got to taste anything.
