Aroz is a Goan pilaf, in which beautiful long grains of rice receive their yellow hue from turmeric and are cooked in a broth, flavoured subtly with few spices. It tastes great on its own, but can be coupled with curries like the vindaloo, sorpatel, etc or sides like stews, steaks, meat chops, or the all-time-favorite Goan chorisos.
'अरोज' एक गोअन पुलाव है, जिसमें चावल के खूबसूरत लंबे दाने हल्दी से अपना पीला रंग पाकर शोरबा में पकाया जाता है, कुछ मसालों के साथ। यह अपने आप में ही बहुत अच्छा स्वाद देता है, लेकिन विन्डालू, सोरपातेल आदि जैसे पक्षों के साथ युग्मित किया जा सकता है।

Ingredients/ सामग्री:
2 cups Basmati rice, washed and soaked for 30 minutes/ 2 कप बासमती चावल, धोकर 30 मिनट के लिए भिगो दें
2 large Onions, sliced/ 2 बड़े प्याज, बारीक कटे हुए
2 medium sized Tomatoes, chopped/ 2 मध्यम आकार के टमाटर, कटे हुए
1/2 cup frozen Peas (optional)/ 1/2 कप मटर (वैकल्पिक)
4 cups of water, hot/ 4 कप पानी, गर्म
2 tablespoon of Oil/ 2 बड़े चम्मच तेल
2 tablespoons of Ghee/Clarified butter / घी के 2 बड़े चम्मच
2 inch Cinnamon stick/ 2-इंच दालचीनी
6-8 Cloves/ 6-8 लौंग
8-10 Pepper Corns/ 8-10 काली मिर्च के दाने
6 Bouillon cubes/stock cubes (4 grams each; Veg/Non-veg as per choice)/6 मैग्गी क्यूब्स / स्टॉक क्यूब्स (4 ग्राम प्रत्येक; वेज / नॉन-वेज पसंद के अनुसार)
1/2 teaspoon turmeric powder/ 1/2 चम्मच हल्दी पाउडर
Salt (as required)/ नमक (आवश्यकतानुसार)

well looks nice but a suggestion add 2 green chillies and 2 now bay leave and chopped ginger... try it and sure u will feel the difference..

Hi, Judith :) Thanks for the question. Well, originally, aroz is cooked in a chicken/meat/veg stock. That's what gives it the subtle taste (apart from the cloves). To reduce preparation time, Bouillon cubes act as a 'saving-grace' and contribute the same stock-flavor. So without them, it will taste different, yes, and you'll consequentially need more salt as well (bouillon cubes are themselves salty). You could try the stock method, if you need guidance on that, do get back on this comment, I'll be glad to help. I hope that answers your question :)

Hi, Venita, thanks for such kind appreciation! Goan sausages are optional, and when added the dish is called ‘choriss pulao’/sausage pilaf. Similarly, one can add prawns and call it prawns pulao. One core dish- Aroz- but many variations!✨

Hello, Hazel! For the water, simply use the same cup you use to measure the rice (my cup measures 240 ml of water, I used the same for the rice). Hope this helped💫

Hello, Elizabeth :) The purpose of the griddle is to allow for indirect heating thereby preventing the burning of the rice closest to the flame. Placing the cooking pot upon a pan of a slightly larger diameter can do the job or a heavy-bottom vessel, or if not available, keep the flame as low as possible, and cook for little over a minute. My humble question is ... why add so many bullion cubes?? Is it healthy?? Can't v enhance the taste any other way ... like adding fresh meat/veg stock ... etc!!

You can add stock, my dear :) Bouillon cubes are alternatives for meat/veg broth, and my video shows what I opt for. Use whatever suits you best- that's the best part about cooking your own food✨ However, if you do eat aroz on a regular basis, I do recommend boiling up some good broth, it surely is healthier. Hello, Pricila! Bouillon cubes are packed blocks of stock/broth powder (if in India, the popular brand is Maggi and they are available as veg and chicken stock cubes of various weights- I used the 4 grams packets) Hope this helped 💫

What you have described is the standard Indian pulao except for the cloves ,ect.In aros the main ingredient is vos ,pork tallow.No need of artificial stock cubes.And our fat red rice ( !!! ) may be used too.
