I think it is abit of both actually. How have presets in your synthesizers sometimes and you know when and where to use certain sounds. Also sometimes you have Bassdrums/Basses prepared. But then sometimes you just go with the flow and you are able to create sounds live and of course change them through tweaking and modifying through your control of drummachine/synth.
