For your snowman... how about just doing an extra top stitch of the darker gray over the lighter gray? That way you don't have to rip it all out. Happy stitching! :)

On the gray floss on the snowman - l would leave it and continue as you are going. Snow is shadowed naturally with light variations. If you still don't like it later, you could use one strand of your new thread and stitch over the lighter gray in tiny portions to put light and dark together. Unless you think it is bulky. Though getting snow smooth is harder than you think and might do.
