Since you have so many that are really close to the end, you should put those in a separate pile and pull from it when you need a finish motivation.

How much silk did you get for the Eiffel Quakers? I'm thinking about starting one myself (will need to get some fabric for you once I decide), but need to know how much silk I'll need and wasn't sure how to figure that out from the pattern itself.

I bought a Hank from silks4u. It was very cost effective to go that route and it’s a lot of yardage! Our projects are relatively small, so we have lots leftover.
