What are starch granules? Maybe molecules?

Not quite, though still tiny. These are microscopic bits of varying shapes and sizes that are the main structure of starch. For the tangzhong, the starch granules that make up the starch are able to absorb the water as they are heated. Please let us know if this helps! -🥐Lily

Great video. However, when the subtitles are longer, they actually block the visual of whatever the baker is doing. Perhaps offset the baker to the side so the subtitles don't block the visual?
