Fluffy Sticky Rice Topped with Savory Serundeng
Ingredients
The Main Ingredients
1 Liter or about 800 grams White Glutinous Rice;
750 ml of Coconut Milk Solution (1 Coconut Milk dissolved in water to a volume of 750 ml or about 3 cups);
2 Pandan leaves;
4 Sheets of Bay Leaves;
3 Sheets of Lime Leaves;
2 Lemongrass, crushed;
½ tsp Broth Powder;
1 tbsp Lemon or Lime Juice;
1 tsp Salt;
6 cloves of Shallot, puree until soft.
Ingredient for Topping
150 gr dry Serundeng, or a mixture of serundeng and shredded with a ratio of 2:1 or 1:1, to taste;
2 large red chilies, sliced, for garnish;
30 pcs pieces of Pandan leaves, sliced obliquely, and Banana leaves (4 x 5 cm).
Note
For more savory results, the dose of instant coconut milk can be increased to 2 sachets or about 130 ml.
