What is the mechanism behind achieving triple point in this experiment. How does this shows that S,L,G are in equilibrium with each other?

In this case, sublimation and evaporation are the same thing. Sublimation means the dry ice goes directly to a gas, i.e. never exists as a liquid. Evaporation means the dry ice is turning into a gas.

doesn't dry ice sublimate, not evaporate?

The assistant for the laboratories in my school literally bought in a kettle of liquid nitrogen(we have the required equipment to make that) and like the teacher briefed us how we should handle liquid nitrogen as it is very dangerous and she was wearing gloves and like the assistant comes in with the kettle spilling white vapour(presumably nitrogen in vapour state) everywhere and she isnt wearing gloves and like that would be very dangerous.
