If you pay attention, he changes the model of springtrap in some parts of the animation in purpose, one of the old models of springtrap didn't have the head/skull inside (Or maybe yes) So he put a skull so it matches the low quality of the old model (Sorry for my bad english, the language i speak is spanish, but i know some english too)

The way Springtrap suddenly changes is not a mistake, is on purpose The old springtrap model for SFM animations was very low quality, and it was made in a time when we didn't fully know the inside of springtrap, yeah, you could say "yee why not just grab his head from the new model" It's not very fitting in this interpretation, and it would look weird for a old model to have a component of the new model, and then the interpretation that it tries to give to the public would be worse
