An excellent example of regerative agriculture is the film The Biggest Little Farm by John Chester. I highly recommend it for anyone interested in doing farming the original way, the old-fashioned way, what in modern day speech is the organic way.

Yes. You can mulch just ensure there is some little space around the stem to avoid it rotting

Not an expert but regenerative farming means finding viable solutions to any problem ou may encounter. Firstly, I recommend wathingvthe film The biggest Little Farm by John Chester. Secondly, in line with that film, ideally you have to introduce something which lives off termites. I am European but have my husband in Kenya and we have a small farm there. So I am a little familiar with things there. But I can't tell you what creatures would be suitable for the job.
