They most likely don't know the answers (though the last one on Jimmy's show is almost always something personal to the guest). Drew seeing the category on the monitor makes sense because it may be a simple monitor (like the teleprompter) that didn't have the spinning wheel graphic... someone just displays the category and maybe it was shown too soon. The spinning wheel graphic isn't random, but the players don't know what it's going to be. You'd have to consistently have good improv talent to make it seem even halfway believable.
