First of all please keep the videos goinf you have some FANTASTIC tips. Also funny thing since you mentioned messing up this in this one... I was playing Joseph's lullaby for special music this week, and at the beginning something juat didn't sound quit right, but again had to keep going, and it ended up actually sounding like the first line or so of Brahms lullaby on the front if Joseph's lullaby which fit super well and actually sounded neat to. So one tip I have for people ( I am by NO MEANS a pro) but someone who is very passionate about music and lives to play. But one tip inhave rin acrossed and I am not saying do it on purpose. But sometimes if you mess up it can up giving you another idea thst actually works really well. And thst was what happened to me this week

My difficulty is knowing which notes to play in the run ups and downs. How do you know that? Is it the scale of the key of the song? Thank you.

I try to look for the connecting notes between octaves. I follow the bass line and play octaves in the left hand, based off of the bass line. Let's say I am in the key of F. My main octaves/chords in the key of F will be F, C, Bflat. So if I have a F octave and a C octave in close proximity, I will find a way to put eighth note runs in between, connecting them. I hope that makes sense.

What music theory do I need to learn to be able to improvise hymns? like do I need to learn all chirds and scales?

Yes, I would. It will help you tremendously. Chords are foundational for improvisation.
