Great cook as always! Eggfests are a good time, although I didn’t cook I attended our local Eggfest at Sullivan’s Hardware in Indianapolis last summer. Great food and great people!!

Great stuff, Ron. I lived in Chattanooga for several years. Unfortunately, at that time, the BGE was not around yet. Now that I am in the Seattle area, I hope you make here someday - a slightly longer trip than Chatt. :-)

I bought my Large Green Egg at a Louisville Eggfest 12 years ago. That is when I stepped up my smoking and never look back. I trying to figure out what to cook for Christmas and I think you just told me how to finish a Prime Rib, Caveman style. I never done this, so do you clean the ash off or does the ash not stick because you blew off the ash?

Does it not cause the food to taste like ash when you throw it in the coals like that?

Hey Rich, no sir, not at all. Just as the way that meat breaks free of the grates when its done, the same principle applies here. No coals stick to the steak at all. It just gives an immediate sear. The coals do have to be very hot though.

Mr. Caveman - "What do you want?" I wanna know what was the approximate cooking time at 275 to reach an internal temp of 115? Mr. Caveman - "What do you want?" I wanna know at what temp did you pull the steak from the hot coals, was it 135 or 145 and was there any rest time? Thank you Ron ika Mr. Cavemen

OK, no problemo, here we go. It took just about 2 hours to reach 115° and then they were rested. The sear was done for one minute per side, removed, sliced and served. I hope I covered everything for ya. Great questions, thanks!

@@FOGOcharcoal You covered it all. I always cook to temp and not time, but I am going to do this next weekend and wanted to have an idea how long it may take. Great answer and great videos. You should try and get to Atlanta in 2022 for the Eggtoberfest. It is a blast. Cheers
