have you had a chance to see if there is enough space to fit brisket on bottom and top at the same time? hard to tell the spacing between each rack

Unpopular opinion obviously, but I'm not a brisket fan 😃. Having said that, I measured and it's just over 4.5" between the top and bottom grate. I think that would fit a brisket just fine.

@ haha ya thats definitely blasphemy not liking brisket. Thanks I’ll have to measure a couple and see if that will get me the room I need

Okay... I have zero knowledge on the health concerns... But.. I would never cook chicken on top of any other meat... like I wouldn't cook pork on top of beef.. I'd put beef on top, pork on bottom ...
