I work in the USA and I am a food safety instructor and a registered sanitarian. I do food inspections when the local health department gets overwhelmed. Let me tell you, as someone in the industry, the Federal, State, and Local food codes have rules in place that are actually set so far above any standard to make you sick. They do this as a safeguard. So if someone is getting sick at a restaurant, its REALLY bad.

Here in Western Canada we get Red Tide, AKA Paralytic Shellfish Poisoning and it's deadly. The paralysis starts in your mouth and hits your extremities/diaphragm within 12 hours. That's on top of the normal, lovely expected food poisoning symptoms. It's a horrible neurological disease with no antidote that would be totally avoidable if people would just follow the fisheries regulations.

Another Witty Username I’m also surprised there was no mention of chemical poisoning in the program since shellfish are notorious in their ability to concentrate heavy metals and organic pollutants. Worse still, with this form of pollution, there is no way to get rid of the contaminants by cooking or preparing.

Anytime I cook at home, I fill a sink with hot, soapy bleach water. Everything gets cleaned, rinsed before and after use. Counters, cooking surfaces cutting boards, all cleaned and wiped before using. I do this even if I'm cooking at a friend's house. Makes it so easy and fast to wash hands, cloths, knives, cutting boards and counters.

In the UK you get no warning. They can turn up at any point, it's effective because it will mean you need to keep standards up all the time because if they slip, that could be the day that they turn up

So far our kitchen has always been ready for inspection every day though. Takes time but you don't want to make anyone sick.

We had a restaurant inspector who took an 8th grade science class along on a few raids (he was a microbiologist). The first thing he did was check the bathroom...it was dirty, and he gave the place a grade of B. He said "it's easier to clean a bathroom than a kitchen, so I wager the kitchen will be awful." It was, and he lowered the grade to C. He pointed to the fridge and said "raw meat on the top shelf, cold cuts on the second shelf, you get contamination." Then you had the overflowing garbage can, the dirty tables, and the cook's head not covered.

I see where you're coming from, but based on the fact it was on printed out paper it was policy for just the store. That tells me they've had problems in the past. Maybe customers thought staff were talking about them and complained? Either way I would think it's just etiquette. The same way I wouldn't expect my staff to yell or act unprofessional.

in my country they do inspections periodically, and if any customer is deceived. A huge fine will immediately fall, and the possible closure of the establishment. this also happens if the inspection detects lack of hygiene. Journalism is not just for giving news, it also serves to alert people to this type of events. it should be like that everywhere.

As someone with really bad OCD, I couldn't work in a kitchen. I would be always nervous of cross contamination. I'd be inclined to throw away every chopping board after every single use. I'd spend probably 2 hours or more handwashing throughout the day and I would likely throw out and restart cooking ingredients constantly.

They can also read the notes the inspector left such as level of cleanliness and understanding of hygine ect. If I had a 3 or lower i doubt I'd have many customers. Lots of customers are assured by the scores that the food theyre getting is from a clean environment.

If I was at work and ever turn a tap off the way the health lady did, I'd be in trouble. You're ment to use a paper towel. So wash hands, dry hands with paper towel then use that paper towel to turn the tap off. 🤦🏾♀️ Looses a stone in 4 days! Well... I best get ordering a dodgy Chinese yum🤪

Got to love KZbin recommendations but one thing that bothered me was watching Chris Hollins touch every surface at the end with his hands, overalls etc. I understand there is a mandatory cleaning station on entry but potentially contaminating so many areas...

The bit about chopping boards. Anyone who cooks either washes the board or has 2. Mine are red for meat and green for veg. They are only a couple of quid each so no excuse.

That Chinese shop brought a fried chicken shops left over stock, to recook in Chinese food. Some of them also use pigeon meat in place of chicken. So look out

Taps fitted on a hand wash basin in a commercial kitchen should be lever arm or knee/foot operated. NOT club head.
