El desarrollo general esta bien, aun que hay un par de fallos a mejorar uno en particular grabe, las yemas hay que ponerlas al fuego junto con la crema batida y subirlas a 86 grados para eliminar posibles bacterias del huevo, y despues ya se le puede añadir el chocolate. Otro es la mousse esta muy dura, se nota al final en el corte del pastel, la mousse tiene que ser mas suave, y las galletas de la base son demasiado duras para este pastel en esfecifico, como digo el desarrogo general bien, pero falta experiencia en este tioo de dulces que aqui en España ya son muy conocidos, Soy Pastelero pro) graciss

I love watching these videos. The kitchens are spotless. There is no wastage of ingredients or products. The chefs are so meticulous with their measuring, mixing, construction and presentation of their products. Great ingredients and its all made by hand from scratch. No talking or carrying on. Just the sound of the machinery doing their jobs and staff moving around quietly. I don't know how much these desserts sell for but they are worth it. ❤
