Even Filipinos do not understand our cuisine. We don't have only one cuisine. To understand Filipino cuisine, you have to understand the different regional divide in our country. Go and eat in the different regions and you will know how different the cuisines are

To tell you the truth, the tinola (Filipino chicken soup) in bamboo has been done so many times, man. Tinola is too simple. If it was me, I'd have done a sinigang soup using sugpo (prawn), followed by a sisig roulade or sausage with a side of fiddle fern salad. The main course would simply be lechon with garlic rice. I'd end with leche flan or halu-halo.

Complex flavors that needs to be partnered with rice at all times. Rice 3x a day-breakfast, lunch & dinner. Almost all viands not unless they are stated as snacks to munch on as is, there is also a need to put condiments not just dipping, but put a little bit on every bite-soy sauce, fish sauce, calamansi, red chili, vinegar, garlic, etc. Even some foods that contain pasta like sopas (milky soup with macaroni pasta), pancit, miswa etc are partnered with rice. Others may say that our food qre salty, bec they're perfrct to be eaten with rice on every bite to balance its taste. We get to enjoy western fooda like steaks but locally partner it with rice instead of mashed potatoes/vegies. Our food is also a bit oily because again it needs rice, w/o rice the oiliness of some food isnt okay to be eaten as is. People also question our rice just being plain and white. We don't season our rice unlike other asian countries, bec again our food is already tasty and salty, we justneed a plain white riceto balance the texture and taste of each food on our table. Cooking it differently will also make it hard for us if thereare more than 1 viand on the table, it may not taste good with other dishes.

It recently has been given given the title by UNESCO as the "Gastronomic City of the Philippines". You have to know that each island in the Philippines have their own delicacy using ingredients endemic only in that specific island. 😊 Visit Iloilo city next time you decided to come back here. 😊

Filipino love to eat like all countries do... .. We don't care how it looks the important thing is the taste.. We want our food serve altogether.. From starter to dessert because we mix up sometime we start from dessert.. It's a jumble. Filipino foods are more meaty and fatty a little vegetable and cooked simple.. As long as there is soy sauce.. Vinegar garlic and onion that's it. And most important is rice.. Rice is life..

When eating in Philippine do it the Filipino ways, use the spoon on your right hand and scoop the food, we don't use fork to scoop food, it's like scooping a cement using shovel no fork

I am a Filipino working in South Korea. I prefer and missed sahawaya, chicken barbeque and lamb spare ribs in Saudi. I will choose these food over Korean food.

Go to Iloilo and taste the Local dishes. You will be amazed. One good example, "Chicken BINAKOL in bamboo". They also serve it in the restaurants but not cooked in the bamboo. They use the same ingredients. No matter what is the method of cooking, it will taste almost the same and the secret is the use coconut water ONLY Iloilo, the new Gastronomic Capital of the Philippines.

Chickens are really agile. I've been driving in the Philippines for more than 35 years and chickens have always crossed my path on the road but I have never run one over. They are really quick, that is why people enjoy watching cockfights. Dogs and cats which are more common street crosssers are more possible road kills. I enjoyed the video. Thank you.

Wondering why Filipinos abroad frequents Filipino Restaurants if there is one even the prices are even higher than steaks and burgers? It's the unique taste. You put Foreign Restaurant and Filipino side by side. The Filipino customers will go to the Fil Restaurant. That proves that the cuisine is good but underrated.

if the Filipino cuisine is bad today and let's assume it is, it does not mean the end of it. Filipino cuisine can evolve by invention, not many people realize but a lot of people the Filipino food we enjoy today are results of creative inventions. bicol sexpress was a dish that won a contest by a Laguna restaurateur who owns a canteen in a train station in Manila. crispy pata was an invention of a restaurateur who because no one will notice the pata part decided to make something out of it, Sisig is a similar story so my point is evolve evolve don't be satisfied with just what we have now. we have some of the most expensive culinary schools in the world so why can't we produce new dishes

As a former food columnist in one of the regional papers in the Philippines, my answer to that question would be that there's no real standard governing the recipes, which hinders its popularity. Everyone insists their recipe is the "authentic" or "original" version, or everyone claims their mom (or whoever relative) makes the best "whatever". Filipino cuisine is perhaps the most inconsistent, unstructured, and confusing cuisine in the world. Some dishes have the same exact ingredients and use the same cooking methods but may have different names. Other dishes have different ingredients and cooking methods but have the same name. Take adobo, supposedly the Philippines' "national dish". It's too confusing. There are too many versions, some with soy sauce, some without, even some without vinegar, with one version that's very similar to the breaded Andalucian adobo. Whatever origins it has is too tiring to discuss. You can get some pretty violent reactions from Filipinos if you even show a hint of suggesting that adobo has origins in countries other than the Philippines. Still others have roots from other countries but Filipinos refuse to acknowledge the foreign origins (or maybe they're just ignorant and too lazy to do some research). Empanada's Latin American origins aren't even discussed by locals. Halo-halo originated from kakigori, yet Filipinos don't even know that. Add to that each province claiming it's where a particular dish originated adds more tension to the discussion. It's actually funny seeing a foreign dude knowing more than so-called local experts. By the way, according to some locals in Angeles City, there's a local government ordinance that prohibits putting mayonnaise or egg on sisig. Any establishment caught doing so is supposed to pay a fine. Don't get me wrong. I'm a Filipino and I love Filipino food. Except that I can go on and on about my criticism of the cuisine as a CUISINE itself, not about the individual dishes.

They always said adobo, sinigang, sisig, pansit or lumpia is the dishes always mentioned in Filipino food but there is a lot more like the soup noodles sotanghon, another one is relyelnong bangus or pusit and many more the problem is the food that was introduced internationally is those some of them are not liven in Philippines or sometime they long not on Philippines that why the dont know the cultural and heritage of the food, one of them i like the tinola it has manny cultural heritage but they never mention it but it is delicious super food soup base because of its ingredients

U really did show why Filipino cuisine isn't world famous coz most of what u showed was not our best food. If u want to show people of the world how good our food is then show our most savory dishes like adobo, bulalo, kaldereta, afritada, chicken inasal, tahong, kuhol, kilawing bariles. Man, u missed so much. Even the lechon u showed wasn't our best lechon. Our most famous lechon comes fr Cebu. U need to travel the islands as well to try our best beach barbecue foods.

The original Filipino Food are Dinuguan(pork blood stew) Laing(taro leaves with coconut)Ginataang Langka(jackfruit with coconut)paksiw(fish with vinegar) etc.. means these food are too tasty and salty and need accompanied with rice! I think that’s the one reason why the westerners doesn’t like our food but not everyone but most of them..

Why it's not popular? 1) Good Filipino food is not easily accessible. Tourist may not get to eat good Filipino food as Filipino resto are not plenty. Because when Filipinos go out, we do not prefer to eat food we eat at home that much. We prefer to eat fast food and other food. Our best food is always those that we have at home. 2) Standard. There is no standard recipe for adobo or sinigang, etc. Our parents and their parents, seasoned their dishes by taste.

In my opinion, Pilipino cuisine are not popular worlwide, because of these reasons: 1. Pilipino foods are for sharing. 2. Pilipino foods are serves in large quantity - a family size. 3. Pilipino foods needs additional condiments, like soy sauce, vinegar, fish sauce, ketchups etc. 4. Pilipino foods should contain complex flavors, because Pilipino thinks that if is a single flavored dish, it is just a snack. 5. Pilipino foods are slow cooked food, except seafoods. So, with these reasons. It is hard to set it up in traditional western fine dining.

I don’t think so… what you mentioned is not the reasons at all. There are lots of dishes that do not need condiments because most of the Filipino cuisine is already seasoned well. If you think of it, Filipino dishes are way to salty (which are not preferred by most of the foreigners) and always need a rice to complement. You know that there more complex dishes to prepare than the Filipino dishes.

Try serve inasal without chicken oil... I don't know, if your foreigners will fell the authenticy of your Pilipino food... 2. Salt is a single component, you can increase or decrease the amount of in depending to which location your are. 3. Give me an American or European dish that is salty, sweet, sour, bitter, spicy and umami at the same time... I will give you the PAPAITAN, PORK STEW WITH BITTER GOURD AND SABA, PINAKBET WITH BAGNET, FISH SWEET AND SOUR and more...

And who said only Filipino dishes that need condiments? Some Asian cuisine needs condiments too. It’s not that so hard to have that condiments. They just need to know how to eat our food. And, try to ask them, why? 100%, they will reply that your fried chicken is JUST a fried chicken... Try have a fine dining set up with so much condiments in your guest table. And, guest what! It will break the feelings of your chef up to its bone marrow! Salt is salt...

I'm a Filipino and i know why. Filipinos are not so open to other spices. They only recognize and use garlic, onion, tomato and sometimes ginger as base spices for almost every local dish. Filipinos might be known to be resourceful and creative in dealing with daily life, but when it comes to food, they are not. They use the same old, boring techniques which limits innovation. Most are also too arrogant to admit that the only style we are know for in some dishes were the only ones "taught" or brought upon by Spanish and Chinese influence.
