How do I like this another 2962 times?! You got my little Colombian heart all aflutter with this video! My dad used to wake up like at 6am everyday and make arepas because in my house we had them most often for breakfast, with Colombian hot cocoa and a fried egg, or huevo perico (scrambled eggs with bits of onion and tomato). On really special occasions though (read: weekends), he would fry them and we would have them with "quesito" paisa (soft and salty, traditionally homemade cheese) and butter. Or, my favorite, just grilled on the special arepa parrilla we use over the electric stovetop with butter, grated mozarella cheese, a thin piece of grilled skirt steak and a slice of tomato. My childhood heart is happy to have shared all this, thanks for posting this amazingness!

Nicely done chef! I'm Venezuelan I can tell. That's an "arepa frita" (fried arepa) but the most traditional is the "Arepa asada" which doesn't require any oil, just the pan at medium heat, it should take 10 minutes on each side for a total of 20 minuts BUT they are way more crunchy, believe me it's worth it! fillings could include shreaded meat, shreaded yellow cheese, chicken-potatoes-petitpois-mayonese-abocado salad (Reina pepiada) and many others.

I am Venezuelan, and taking your request to make corrections I would suggest: You have to make sure the Mix is moist and soft enough so it doesn't crack when you are trying to make the dough. Actually is better to add a little more water than what you expect it to need because in a couple of minutes the cornmeal will absorve it.... Then you have to handle it and knead knead knead! Until is very soft and manageable... and then you start by making a Ball, then you push it both sides with your hands until you get the ¨bread¨ desired shape. :) and Remember, practice makes perfect! From: A Venezuelan Girl that after 30 years in this planet is now that I am mastering the techniques of Making Arepas!!!! ... hehehehehe

I've been dying to go boar hunting and toss a small one in my bbq pit to smoke all day. Then make a big pile of these and a bowl of honey bbq sauce to eat it with. I wonder if you Hispanic folks eat it that way? The feral pigs nest not too far south of me.

I like to fill these with leftover Ropa Vieja. I add a slice of tomatoe, a piece of lettuce, and some homemade cilantro lime mayo. It's delicious! and a Venezuelan coworker of mine told me to only cook them half way and then freeze them. That way they keep for whenever I need them and I can just stick a frozen arepa in the toaster at work and finish the cooking. A Venezuelan hot pocket!

Venezuelan guy here, great video man. If you are going to do a fried arepa I recommend to do a small hole (about I finger size) in the center, kinda like a lifesaver, this way the oil will rise from that hole and cook it better, that's how Venezuelan moms does it. Please also keep in mind that the most used way to cook the arepa is on an iron pan or grilled, it usually consist on two steps, first on the iron pan and when is a little hard you will heat it on an iron net (not sure the name in English). Best of wishes.

I was an exchange student in Colombia back in high school and later got to visit Venezuela for a few months, so I've eaten a fair share of arepas. In Colombia, every arepa I had was filled with something (egg, cheese, ham, etc.) and fried. In Venezuela, they were pan fried, or baked, or started in the frying pan and finished in the oven - much more variety there as to cooking style, but fewer choices regarding fillings. We typically just buttered our arepas in Venezuela.

Great video, don't worry about pronunciation, I am from Venezuela and I use the top of a tupperware as a mold, and fill it with anything you want, chese (gouda is realy good) tuna salad , chicken salad , devil ham ( mixed with a little mayo) , meats etc, You can also make arepas de chicharron, the same arepa , before frying take a little bit of pork cracklings, break them in small little pieces and mix it in the dough.

I am Colombian and my family and I don't cook it in a pan with oil or butter. We actually cook them over heat. I generally use a cooling rack type of metal surface with the bars and place it over the stove top. We stuff them with cheese and butter immediately after taking the arepa off of the heat. I've always had an electric stove so I'm not sure how that would work with a gas stove. My favorite is mozzarella cheese btw. :) yum. Serve with typical Colombian hot chocolate makes it even better.

If it cracks around is bacause you made the bough too hard, don't put too much flour, just enough to make stable, let it settle for 5 to 10 minutes, then you can add a bit more water, till you can manipulate the dough and shpe it without cracking around(too hard )or melts in your hand while shaping it (too soft)

My dad is Venezuelan and we regularly have these for a weekend breakfast. We fill it with a Venezuelan style scrambled eggs called "perico" which is fried onion, garlic, tomatoes, peppers (I don't add them because I don't like peppers) and I usually substitute them with mushroom and of course, some salt and pepper to taste. Also butter the inside of the arepa first before the fillings. It'll be nice and juicy inside with the nice crunch of the outside 👅

Hey, im venezuelan and very good on the arepa making business. There are a few differences between the colombian and an venezuelan arepas besides de toppings. Anyways, when it comes to shaping the dough, is usually best if u roll a small ball (of the portion size) between ur hands, so when is nice and round u just flatten as if u were clapping but with the dough between ur hands, and go on rotating it that way is nice, and flat and even.

When my mom makes arepas, I don't often pay attention because it happens like literally every single day unless there's left over from the day before, the dough is a little tiny bit wetter than that but it's not enough to make a significant difference. I personally think they're 10937291x better fried, but you can also cook them on a pan with no oil as a healthier option it does take a little longer but 9/10 times that's how my mom makes them. I like to melt cheese in it, it happens to make it delicious. When me and my cousin were younger we used to eat it with devilled ham, everyone thinks it's gross but we find it delicious. You can also have it with beans, eggs, chicken, beef, pretty much anything. It's almost like bread, but better.

Thank you Chef John! There are dozens of ways to make arepas: fried, boiled, baked, grilled (as well as combinations of each). To boil arepas you drop them into boiling water, wait for them to float and then into the oven (I like a thick crust so 400F for 20 minutes); to bake arepas, you first place them on a hot skillet (in Venezuela they're completely flat and are a known as "budares") with only a little oil until you get a little bit of a burnt curst and then into the oven.

Many ways to cook Arepas in Venezuela. Fried is one way, make them thin about 1/2 inch thick make a hole in the center with your finger to allow oil to come up and cook the middle, also Bake them, make a crust to both sides in a hot skilet then to the oven at 350 for a while (my mom test them by slapping them if they sounded hollow or puffy they are done) you can Boil them, they won't come appart and finally in the skilet itself, just make the crust and continue cooking turning them until the sound puffy, it may show some burn marks but that only make them better tasting. One thing, if they come out too hard you may need to add more water, follow the instructions in the bag.

Arepas! Are from Venezuela!!! :) It is the most awesome food ever! ;) hehe! Your arepa looks good! However we usually make a ball with the dough and then press it between the palm of your hands until you get the arepa shape! Then you have 2 cooking options, fried (as you did here, we usually add more oil so the arepa is fully covered) or in the "budare"=like you did in the pan but only with a drop of oil! Your recipes are great, we had tried some of them already! Cheers from Venezuelans!

Tambien soy Venezolana. Saludos!

Oh and meant to add (re: alias blogger comment, swatson) - perfect for those w/ celiac or are looking to cut down on wheat based flours! Love adding in cojita (salty cheese), fresh avacados and fried plaintains! Or, for a savory meaty areapas, Trader Joe's bbq beef brisket (given that my HOA doesn't allow grills, boo). The fillings are endless!

hi! i'm so pleesed that one of ur favorite recipes is a dish of my country. just one thing: is healthier if u don't fried. buy a tosti arepa and put the paste directly. to me, it taste better. u have to polish ur technique on the blending process. don't be afraid of getting dirty with the paste. when the arepa has cracks that means that u have to do it better next time (more water basically) . ty so much for the channel, i enjoy it very much! grettings! :)

Yes, you can add garlic to the dough thus the dough will acquire the flavor of what you add. You can bake bacon strips and blend them in the blender (with no water inside the blend) so they turn to "bacon dust". Add this and garlic to the dough and it will become delicious.

Hey! Yes, definitely a staple in my home, I'm Colombian. PAN means bread btw. And yes, you caught me...I was saying to myself, "OMG!! That's not how you shape them!" But it looked really good!! Well done!

I absolutely love polenta... so I'm DEFINITELY going to try this. I'm lazy so I'll get some barbacoa from the local mexican meat market.
