It is a sweet classic of American pastries, specifically from the state of Florida, where these limes, typical of the Keys, are grown.

Key Lime Pie (Florida Lime Tart) Recipe.
🛒 Ingredients (23 cm / 9 in diameter baking dish):
For the crust:
🔸 300 g digestive cookies (21 pcs) (10,7 oz)
🔹 90 g unsalted butter (melted) (6 ½ tbsp) (3,2 oz)
Filling:
🔸 4 egg yolks
🔹 595 g condensed milk (21 oz)
🔸 140 ml lime juice (½ cup + 1 tbsp)
🔹 Zest of two limes (2 tbsp)
To garnish:
🔸 300 ml heavy whipping cream (1 ¼ cup)
🔹 30 g icing sugar (3 tbsp)
🔸 Zest of 1 lime
*** For best results, it is advisable to follow the quantity of ingredients in grams.
🍳 Directions for the Key Lime Pie recipe:
1️⃣ Crush the cookies in your food processor. Add the melted butter and mix until well integrated. Pour the mixture over the mold, spread it covering the sides and the base. Press very well to compact. Bake in preheated oven at 180 ºC / 350 ºF for 10 minutes.
2️⃣ In another bowl, put the egg yolks together with the zest of the limes. Beat with the electric whisk for two minutes. While continuing to whisk, add the condensed milk and then the juice of the limes.
3️⃣ Pour the mixture over the cookie crust and bake at 180 ºC / 350 ºF for 15 minutes. Cool on a wire rack and then refrigerate at least 4 hours before serving.
4️⃣ When ready to serve, whip the cream with the powdered sugar and decorate the surface with it as you like. You can use a piping bag or simply place it in the center and distribute it in a rustic way with a spoon making peaks.
5️⃣ Finish with lime zest on top.
👌 Notes for the Key Lime Pie (Lime tart):
🥧This is a tart named after the limes grown in the Florida Keys. Given the difficulty or impossibility of getting them, you may use regular limes to prepare it, resulting just as tasty.
🥧 You may also use lemons if you prefer.
