From the crispy, golden skin of a roasted duck to the rich, hearty flavors of a traditional Transcarpathian bograch, both dishes showcase the warmth and comfort of timeless culinary traditions. Duck with Apples Baked in Foil Ingredients: Whole duck - 1.5 kg Apples - 6 pcs (360 g; weight without cores - 320 g) Mustard - 2.5 tbsp Garlic - 4 cloves (20 g) Dried rosemary - 0.75 tsp Ground black pepper - 0.75 tsp Honey - 1.5 tbsp (45 g) Sunflower oil - 3 tbsp Salt - 1-1.5 tsp (or to taste) Preparation: Preparing the Duck: If the duck is homemade, pluck and singe it. Remove the neck and tail. Use tweezers to remove any remaining feather stubs. Wash and pat the duck dry. Making the Marinade: In a small bowl, mix honey (melt it first if thick) and mustard. Peel and mince the garlic. Add sunflower oil, rosemary, black pepper, and minced garlic to the honey-mustard mixture. Stir well. Marinating the Duck: Rub the duck with salt and coat it evenly with the marinade inside and out. Place the duck in the refrigerator to marinate. For the best results, marinate it for 2-3 days. If short on time, 30 minutes will suffice. Stuffing: Prepare the stuffing for the duck. Cut 3 apples into quarters and remove the cores. Place these apples inside the duck. Sew the opening shut with kitchen twine or secure it with toothpicks. Baking: Place some of the remaining apples on the bottom of a baking dish. Put the duck on top along with the marinade. Arrange the rest of the apples around the duck. Cover the dish with foil. Oven: Preheat the oven to 200 °C (392 °F). Place the duck in the oven, then reduce the temperature to 180 °C (356 °F) after 20 minutes. Bake the duck for 2-2.5 hours. Final Stage: After 2 hours, remove the foil and roast the duck until golden brown. Baste it with the juices released during baking. Serving: Garnish the finished duck with fresh herbs and serve with the baked apples. This recipe will bring an aromatic, juicy duck with a tender filling and a crispy crust to your table. Enjoy! Bograch with Chipetka Bograch is a hearty soup that delights with its rich flavors and filling ingredients. Whether cooked outdoors over an open fire or in the comfort of your kitchen, this dish always turns out incredibly delicious. Ingredients: Beef (pork) - 1 kg Pork lard - 100 g Potatoes - 1 kg Onions - 2 pcs Carrot - 1 pc Bell peppers - 2 pcs Tomatoes - 2 pcs Garlic cloves - 3 pcs Tomato paste - 1 tbsp Ground paprika - 2 tbsp Caraway seeds - a pinch Ground black pepper - to taste Salt - to taste Water - 1-2 l Preparation: Prepare the ingredients: Wash and pat dry the meat, then cut it into small cubes. Dice the pork lard finely. Chop the onions, carrots, bell peppers, and tomatoes into cubes. Peel and dice the potatoes into large chunks. Mince the garlic. Render the lard: Heat a thick-walled cauldron over an open fire and render the pork lard. Sauté the onions in the melted fat until soft. Add spices: Stir in the paprika and mix well. Cook the meat: Add the beef, garlic, and caraway seeds to the cauldron. Stir thoroughly over high heat until the meat is seared on all sides. Simmer the meat: Pour in one cup of water, reduce the heat, and let the meat simmer. Stir occasionally and add water as needed to prevent drying out. Cover and cook for 1.5-2 hours, until the meat softens. Add vegetables: Once the meat is tender, add the carrots and potatoes. Stir and cook over medium heat, stirring occasionally. Add remaining ingredients: After 10-15 minutes, add the bell peppers, tomatoes, and tomato paste. Season with salt and black pepper. Adjust the amount of water to reach the desired soup consistency. Final simmer: Bring the bograch to a boil and cook covered for 15-20 minutes. Prepare the chipetka: While the bograch is cooking, prepare the "chipetka" dumplings: Mix 1 egg with a pinch of salt and enough flour to create a soft dough. Pinch off small pieces of dough and set aside to dry slightly. Add them to the soup in the last 5 minutes of cooking. Serve hot, straight from the cauldron, with fresh herbs or bread on the side. This Transcarpathian stew is perfect for warming up on a chilly day or enjoying with friends and family around the fire.

i was waiting to see how the duck looked like after it was cooked looked amazing, was waiting to see the first slice come off, what a wonderful family, i had 7 brothers and sisters big Irish family, my mum cooked a dinner every day and we also sat around the table, you ate what you where given and it was always good healthy food, this family brought me back to those days, sadly 2 sisters gone now and my brother, what i would do just to go back for one day.
