How To Make Trini BBQ Chicken | Foodie Nation

We had no choice but to go “in de yard” to prepare this Guava BBQ Chicken the right way!
BBQ CHICKEN INGREDIENTS | Yield: 8 - 10 Portions
2 Seasoned Chickens - Cut into 8 Pieces
20 Oz Guava Bar B Que Sauce
Coal Pot & Coals
METHOD
1. Place a deep medium iron pot on the stove. Carefully lay the pieces of seasoned meat into the pot starting by placing the thighs and legs first followed by the breasts then wings.
2. Place heat on medium and cover pot. Allow meat to steam gently and spring its natural water. This process should take about 15 minute initially then remove cover and using a tong, re-distribute and move the pieces around to ensure they cook evenly. Cover again and cook for another 12 - 15 minutes.
3. Chicken pieces would have pre-cooked and now assume a light grey colour. Remove from heat.
4. Meanwhile, light coals by placing pieces of charcoal into coal pot to full about ¾ the vessel. Small shavings of wooden chips can be used to place around the coals to help coals stay lit when starting the fire. In the bottom furnace or coal pot, roll a few sheets of new paper print into balls and stuff into the furnace’s opening. Also, place small pieces of news print amidst the coals close to the pieces of wood.
5. With a match, light the rolls of paper in the furnace to ignite and heat the charcoal from below. As furnace bellows fire, the flames would start the light both the pieces of charcoal and wood. The small rolls of paper act as tinder also for the coals.
6. As the charcoals begin to smolder, use a piece of hard cardboard or a folded a new papers to fan or create some breeze by channeling it into the furnace of the fire and feeding the tinder to birth a contiguous flame.
7. Once a steady flame catches and the charcoals are fully lit, wait for the coals to turn a slight amber and ashy color. With this indication you are ready to place your wire mesh or racks atop the coal pot and Bar B Que.
8. Place all similar pieces such as thighs on the grill to cook at once. Then continue with all the breast then wings, and legs etc. This way, all the similar pieces cook evenly.
9. As you place your pieces on, use a tong to turn the chicken as they cook allowing about 3 minutes average on each side. Be sure to baste the pieces of chicken frequently as they cook and when you turn them. This way, the heat allows the sauce to carmelise on the chicken pieces an slightly create that attractive charred finish that Bar B Que is known for.
10. Feel free to taste a piece for doneness and to ensure meat is cooked. Even though the meat has been precooked, you still want to ensure that the smoky flavor and Bar B Que sauce has infused and slightly penetrated the flesh.
11. Enjoy.
BBQ SAUCE INGREDIENTS | Yield: About 20 Ounces
2 Tbsp Vegetable Oil
¼ Cup Onion, Finley Minced
6 Cloves Garlic, Finely Minced
1 Tbsp Pimento Peppers, Finley Minced
1 Tbsp Green Seasoning
½ Cup Guava Jam
1 ½ Cup Ketchup
½ Tsp Geera/Cumin Powder
½ Tsp Chili Powder
½ Tsp Paprika Powder
½ Cup Water
2 Tbsp Molasses
1 Tbsp Apple Cider Vinegar
2 Tsp Fresh Chadon Beni, minced
Salt and Black Pepper to taste
METHOD
1. Place a medium heavy bottomed sauce pan over high heat. Add the vegetable oil and place in the onion, garlic and pimentos to sauté for 2 minutes until fragrant then place in the green seasoning and continuing sautéing for 20 seconds.
2. Add in the Guava Jam, cook until jam liquefies then add in the ketchup, cumin, chili and paprika powders. Pour in the water and stir to combine.
3. Add the molasses and vinegar and cook gently on low to medium heat for 6 - 8 minutes covered, stirring once or twice during the duration.
4. Remove cover, drizzle in the chadon beni and stir. Taste and adjust with salt and pepper to your liking.
5. Remove sauce from the heat and use to Bar B Que Chicken, Pork, Seafood and even Lamb. Enjoy.

Just made this today, and it's delicious!! I had to use what I had, so I made a few changes. I didn't get to marinate but two hours, so I cut slits into the thighs to penetrate better, and I had to sub cilantro for the culantro, and my SIL's homemade strawberry habanero jam for the guava jam. Delish! Can't wait to try it again with the guava and overnight marination. Thanks for the real deal! Definitely printing this one for my recipe binder because I know it will be in regular rotation.

Hi 👋kezzy , chef oh my my that's the way I do it in my back yard just a simple set up ,I have 3coal pots , I know what you are talking about delicious 😋😋👌👏. Thank you for showing the old time way ,no morden equipment can make a BBQ taste as good as a coal pot ,before I had coal pots we used to use use 4blocks on the ground ,dig a a hole &put the coals in &do our thing man man I'm telling you 😆 God bless guys .

Hey...great work you are doing and keep doing it. For me I have learned the technique of raw meat on coals. If I want to cheat for small scale I would bake it in the oven without sauce and finish it on the grill. Large scale I would do that method you described above.

I did my first BBQ last weekend I was always afraid of doing it it tasted so delicious. Next time I will try your method and your Guava BBQ Sauce. Plz show us how you BBQ Fish I steamed mine and put sauce in foil and placed it on the grill.

Chef Jason & Kez all yuh ah de best. Since I left Trinidad in 2005, I haven't been back, and I miss my island so much. But every time I watch you guys it makes me feel like am home. I just followed the recipe and technique and I am happy to say that my BBQ has never tasted this tender and succulent. It used to be some what "rubbery% in texture and that was becasue I left it too long on the grill. Chef Jason ur brilliant! I also did the BBQ sauce to compliment the chicken and it was awesome! Thank you so much!!!! Can u show me the technique to do BBQ fish and BBQ pork?

I use the exact same methods u do. Steam(without water), don't immediately grill with the sauce on the meat. So I'm on the right track. Will definitely have to try that guava bbq sauce. Sounds delish. Thanks for sharing. Big fan of u 2. Love u guys

You guys made me so hungry. I don’t have a barbecue grill but I have an electric grill. I do miss the flavor you get when you’re using charcoal. I may have to go and buy a small one. I have two big gas grills, so my husband doesn’t think I need to purchase one for charcoal. But charcoal brings a very good flavor. Let’s grill up some fish.🙏🏽

Keziann it's always good too enjoy ur Cooking ..but today 06-15-2020 the BBQ pit I have not seen A cold pot In many many many years thank you for sharing that part of your recipe for BBQ I need to get one? Nice alternative to bbq. When you boil chicken (pre cook) you remove so much flavour. But as you said it's a good alternative when people can't get the inside to cook faily evenly to the outside. Now I heard you all speak about other meats, certain meats you can't use this process, when steaming certain meats the texture and the taste of pre steamed pork and beef very different to directly grilled pork and beef. Great bbq sauce recipe thanks for sharing.

I am a white girl dating a Trinidadian. We made this for a barbecue two weeks ago and have had everyone in the house raving about it ever since All wings and all barbecue sauce is forever ruined for me after eating these. 10/10 would recommend.

Great job as usual chef and Kezzy!!! I have a qurstion...I know someone who half steam their chicken then use the liquid to make BBQ sauce. Is that safe? Doesn't the liquids have bacteria from the half cooked chicken? What's your take on that chef?

Not a chef...but as Jason said the liquid is chicken stock. And than is used in many recipes thereafter.🙂

The chicken liquid is cooked during the steaming process, then again in the bbq sauce then again on the grill. So it’s safe to reuse the liquid

Ah learn something dey for sure. I know bout preboiling d chicken, but not on the low fire covered, no water. About 40minutes in total then. Smart. Energy saving Lol. Iz how kezzy pause and watch him when he come out d coconut tree Lolz. 😅😆
