This soup is basically sancocho. The Latin countries use more tomato sauces and different meats but the basic spices, aromatics, pumpkin as a base, and ground provisions are the same. So this is basically a sancocho

How about putting some chicken noodles in. It dosen,t matter what kind of soup. Oxtail or any other; chicken noodles bring up the flavour. They,re sold in packets. Give it a try. Lovely to see you two together again. The soup looks tasty.

He said he did it like that because if it would have taken a longer time to cook if added raw, cowheel normally takes a long time to cook unless you use a pressure cooker.
