For the longest time I did not believe that Chef Michael Symon was getting his due. Now however? I love this new format that he does and it really brings out his personality and talent.

Looks amazing. However, I am not a fan of ground chicken. Is there a way to substitute ground/grated eggplant to make the light and tender meatballs? I much prefer the flavor of eggplant parm over chicken parm.

Not a fan of ricotta. Wonder if there's a something else that can be used? I like using an ice cream scoop too so u get an even size (most of the time). I use an ice cream scoop when doing cupcakes and making cookies

Just started watching as i love Michael Symon, I have to be honest, his wife, Liz changes the vibe of the show. Shes cool but she has bad manners: Im personally not a fan of people over talking someone, snatching things from people, or just being generally a buzz kill. I dont understand why they have to keep holding the camera (phone) so Liv can eat; its on a tripod, put it down!
