Perfection. I did not change anything and followed her directions exact. Best King Salmon dish ever. Thanks!
@michaelmcphee29304 жыл бұрын
I had some left over salmon which I broke up and set aside to add to a buttered pan of sliced fennel bulb, zucchini, 3 spring onions, an onion, a few cherry tomatoes plus a tbs of capers and pickled green peppercorns, which really set it off. I added fettucini to it and a lashing of butter, then showered it with black pepper. I'm glad I live alone. No way I was sharing that. Two helpings while watching the football .

Apparently people in the youtube comments don't understand that the amount of butter and salt she used was actually right on point with what most trained chefs would do. She knows what she's doing guys, and a meal like this can totally still be a part of a balanced diet. Meanwhile, everyone hating on her for using too much salt and butter are microwaving their frozen mac & cheese, or boiling water for their ramen noodles.

Ciao, Giada! Rosalia Keller

For video purposes. They cut the time as much as possible.
@oceandrew4 жыл бұрын
Oil and butter have very different flash points and also taste quite differently. So you don't want to use butter to cook/sear the salmon as you'd burn the butter. But adding butter towards the end with the herb(s) infuses flavour and texture. Same with the shallots/spinach mix - start with oil and finish with butter. Hope that helps.
@paigejohannesen96814 жыл бұрын
Butter by itself burns. When you add refined olive oil or a vegetable oil, you raise its smoking point. It’s a pretty common thing to do. I’d say I do it daily.
